Hugo Roellinger a décroché lundi 31 mars 2025 une troisième étoile pour son restaurant « Au Coquillage » à Saint-Méloir-des-Ondes. Face au Mont-Saint-Michel, le chef triplement étoilé déroule à sa table une « pérégrination marine ». Un hommage savoureux, subtil, surprenant à cette mer sans laquelle l’ancien marin épris de sports nautiques serait proprement orphelin.
